Passing through the wide routes of the development marker “Souq El Ta’mir” in Riyadh, the aromatic smell of Arabian coffee easily finds its way to the nose and the ears can listen to the original story behind the popular coffee from the oldest shop owners.


Haitham Bin Sultan, manager of the "Dar Al-Hilal and Al-Qahwa" store, said that he brought the culture of Arabic coffee with his family from Yemen, where he was born, to Saudi Arabia after they immigrated. In Yemen, Arabic coffee is produced from a vegetable tree, which is grown annually.


Bin Sultan added that coffee beans are collected by hand in the harvest season. Then, they go to a machine called “Jrasha”, which separates the chaff from the coffee in preparation for the roasting stage. “Roasting has three degrees: light, medium and dark. This is defined according to the customer’s demand”.


Nawaf Bin Sultan, an assistant manager, said that Saudis usually drink coffee before breakfast on a daily basis as they consider it their “day starter routine”. It is also regarded as a requirement to serve guests whenever they drop by and to take after Iftar in the holy month of Ramadan.


Nawaf added that while coffee originated in his home country, Yemen, it is more popular in Saudi Arabia. “Yemenis mostly have coffee in family gatherings and special occasions but not daily like the case is in Saudi Arabia”.


Muhammad Al-Rawi, Manager of Al-Numan Coffee, who still uses Al-Dallah to prepare coffee, said that the iron dallah with which coffee can be prepared has existed since the Bedouins, and it is used to prepare coffee faster, but now, in this advanced era, coffee has become prepared in the “Kanka” on a quiet fire.


How to make Arabic coffee:

There are basic ingredients that go into coffee like Cardamom, cloves, saffron, mastic, and sometimes nutmeg, mixed with coffee and ground.

After grinding with the ingredients, you can make coffee with the choice of flavor you like.


Ingredients:

A spoonful of ground coffee.

A tablespoon of cardamom.

A piece of clove.

A little saffron.

A glass of water.


How to prepare:

-We put the water in the "canopy", or in the "dallah", and put it on the fire and leave it until it boils.

-Add the coffee and cardamom, stirring, and leave to boil for 3 minutes.

-Add the cloves, stir and simmer for another 3 minutes.

-Remove the ingredients from the heat, and cover for a little while.

-Add saffron to it as desired, pour into small cups, and serve hot.
